Manufacture of lentisque vegetable oil

    There are two main methods of producing lentisque oil: traditional oily macerate and "raw" or refined oil.

The traditional oily macerate of lentisque

    The 100% natural preparation of the oily macerate of lentisque is carried out as follows:
        Red fruits of pistachio lentisk are freshly harvested;
        Then, they are macerated in 100% pure and natural vegetable oil;
        Finally, the oil produced is packaged in glass bottles.

Raw lentisque oil

    The manufacture of this oil proceeds as follows:
        Harvest of fresh red fruits that turn black when ripe;
        Extraction of fruit seeds;
        Cooking the seeds in boiling water;
        Harvesting the obtained pure oil that has separated from the juice on rising to the surface;
        Packaging of pure green oil, also called "raw" oil, in glass bottles.

    Note: The "raw" or pure green lentisk oil is perfectly usable and consumable as is. However, market demands are pushing some producers to refine it. Therefore, it can be found on the market in different colors from yellow to brown.

    In general, the production of lentisque oil is mainly done in the traditional way, but because of the constant demand, more and more steps are now automated.

    Depending on the quality of the fruit, about 100 kg of seeds are needed to produce 8 to 10 liters of oil. This explains why lentisk oil is scarce and quite expensive.

    This being said, oily macerate can also be found on the market where the fruits are macerated in natural vegetable oil for a long time in order to benefit to the maximum of all the virtues of the pistachio lentisk.
